Gluten Free Healthy No Bake Cookies

Oh my heck, I love these cookies. They were always my dad's favorite....I mean their perfect....NO Baking involved & Gluten Free!!!

Plus, even better. Mine are the Healthier Version, so a little less guilt when eating them, ha!!!

Let's begin shall we!?

1 Cup PB
3/4 Cup Honey
1/2 Cup Coconut Oil
2 Tsp. Vanilla
2 1/4 Cup Oatmeal
6 Tbls. Cocoa

Add first 3 ingredients in a saucepan & heat on low until melted.  Then add Vanilla, Cocoa & Oats!!!

Stir until well blended & take a ice cream scooper to scoop on to a baking sheet. Put in the fridge to set!

ENJOY THE GOODNESS! :)

I've never been a huge fan of Pancakes! You stick French Toast, a Crepe or Waffle in front of me though & it's GONE!! :)

But these Old Fashioned Pancakes made every one of my taste buds water & made me a BIG new fan of Pancakes!

1 1/2 Cup Bob's Red Mill 1 to 1 Baking Flour
3 Tsp. Baking Powder
1 Tsp. Salt
1 Tbls. Sugar
1 1/4 Cup Coconut Milk or Dairy Milk
1 Egg
3 Tbls. Coconut Oil or Butter, melted
1 Tsp. Vanilla Extract

Mix all together & Enjoy!!!

These are the Bomb and I'm the Bomb (according to my kids) when I make these for them! Pretty darn tasty!

2 Cups Bob's Red Mill 1 to 1 Baking Flour
1/2 Tsp. Baking Soda
3/4 Cup Sugar
1 Egg
1/2 Tsp. Baking Powder
1/4 Tsp. Salt
1/4 Cup Coconut Oil

Mix all above ingredients.

2/3 Cup Mashed Bananas
3 Tbls. Coconut Milk
1/2 Cup Chopped Walnuts (optional)
1/2 Cup Chocolate Chips (optional)

Blend all together. Place in muffin tins and bake at 350 degrees for 18 minutes! Yummy!!

I have made these over and over! I can't get enough of them! They are so delicious and thick that you will want to keep eating them! HaHa! :) The really great thing about these rolls, is there is no sugar in the recipe! WooHoo!
 
 
4 cups Bob's Red Mill 1 to 1 Baking Flour
2 cups Warm Water
1 tsp. Salt
1 Tbls. Yeast (Yeast is considered Gluten Free!)
 
Sir Ingredients together and let rise until double. I let my dough rise with a towel covering the top of the bowl and for about 30 minutes. Spray muffin tins with cooking spray. Roll the dough into balls with your hands and place into the muffin tin. It will be sticky and can be hard to roll. But just trust me, they turn out amazing! ;)
Bake at 425 degrees for about 10-12 minutes!
 
Oh gosh, you will thank me for this recipe, they are so YUMMY and good for the TUMMY!

The dough kept getting stickier and stickier the more I made each roll, haha, so my first ones look great and then they go downhill! But hey, still so GOOD!
That's all that matters, right? :)
 
 
I use the Red Star Active Dry Yeast, it says right on the label that it is a Gluten Free Food! :) It works GREAT!

So my husband loves Biscuits and Gravy! I have to admit, that I love them too! But I wanted to give a normal Biscuits & Gravy Recipe a nice Twist, so I made these for him. It was success!!
 
 
Homemade Gluten Free Biscuits
 
1/3 cup Butter
2 cups Bob's Red Mill 1 to 1 Gluten Free Baking Flour
3 tsp. Baking Powder
1/2 tsp. Salt
3/4 cup Milk
 
Soften the butter. Sift in flour, baking powder and salt. Add the milk. Blend and roll out! Make sure to keep the dough thick so you can cut them out with a glass or can. I think the thicker the biscuits the better they are! Place on greased cookie sheet and bake at 400 degrees for 12-15 minutes!
 
While the biscuits are cooking I started the main course. We love Jimmy Dean Sausage at our house, so we use that! So...
 
1 Roll of Jimmy Dean Maple Sausage
1/2 cup Scallion Onions
1 tsp. Pepper
1 1/2 cups Grated Cheese
1/2 cup Real Bacon Bits
3 cups Milk (I use Original Coconut Milk, but dairy will be just fine)
2 cups Bob's Red Mill 1 to 1 Gluten Free Baking Flour
 
Start cooking the sausage, scallion onions and add the pepper in a large pan. Do not drain the grease from the pan. This is what makes the gravy so yummy! After the sausage is cooked, add the milk and flour. You can keep adding the flour until you've reached a consistency that you like for the gravy. Some like it thick and some like it thinner. Totally up to you!
 
Crumble the biscuits into a 9 x 13 glass pan and add the gravy and sausage mixture on top. Mix it all together well. Add the grated cheese and Real Bacon Bits on top. BAKE at 350 degrees for 12 minutes or until cheese is melted!

1 1/4 cup Bob's Red Mill 1 to 1 GF Baking Flour
1/4 cup Sugar
1/2 cup plus 2 Tbls. Butter
1/2 cup Butter
1/2 cup Brown Sugar
2 Tbls. Corn Syrup
1/2 cup Condensed Milk
2 cups Chocolate Chips
 
Crumble first 3 ingredients in a 9 x 9 baking dish. Cook at 350 degrees for 20 minutes. Boil next 4 ingredients over medium heat for 5 minutes stirring constantly. Remove from heat and beat until thick. Pour over the crust. Melt chocolate chips and spread evenly over toffee layer. Cool slightly and cute!

3/4 cup Smooth PB
7 Tbls. Butter, divided
1 1/2 cup Powdered Sugar
10 oz. Chocolate Chips
 
Melt 6 Tbls. butter and PB until creamy. Add powdered sugar into the mix and beat until incorporated. Press PB into the pan. Melt chocolate chips and remaining 1 Tbls. butter together and mix. Pour over the PB. Put into the fridge to set for at least an hour.

1 cup Old Fashioned Oatmeal
1/2 cup Smooth Peanut Butter
1/3 cup Honey
1 cup Coconut Flakes
1/2 cup Chia Seeds
1/2 cup Mini Chocolate Chips
1 tsp. Vanilla Extract
 
Mix all together and form into balls. Then put them in the fridge for approximately 30 minutes.

1 1/3 cup Bob's Red Mill 1 to 1 GF Flour
1 tsp. Baking Powder
1/2 tsp. Sea Salt
1/2 tsp. Baking Soda
1 tbls. Honey

3/4 cup Water + 2 tbls. (warm water)
2 Egg Whites stiffly beat & set aside
 
 
Combine all the wet ingredients and mix. Combine all the dry ingredients and mix well. Mix wet and dry ingredients together and gently fold in the egg whites.

1 cup Brown Rice Flour or Bob's Red Mill 1 to 1 Baking GF Flour
1 cup Coconut Milk
1 Egg
1/4 tsp. Salt
1 tbls. Butter, Melted
 
Combine flour, milk, salt and the 1 egg together in a bowl. Mix well. Add 1 tbls. Butter to a pan, let it melt and add just enough crepe batter to cover the pan. Cook and enjoy!



I love these two! They are always wanting to cook with mama! :)

2 cups Bob's Red Mill Baking 1 to 1 GF Flour
3/4 cup Pure Cane Sugar
1 tbls. Baking Powder
1/2 tsp. Salt
2 Eggs
1 cup Coconut Milk
1/3 cup Coconut Oil
1 tsp. Vanilla
1/2 cup Chocolate Chips
 
Preheat oven to 400 degrees. Mix all wet ingredients together. Mix all dry ingredients together. Combine both wet and dry ingredients. Fold in the chocolate chips and place batter into the muffin pan. Bake for 15-20 minutes.
 
These are delicious right out of the oven...still warm...with butter on top! Oh gosh, I think I may have to make some right now. ;)

8 Eggs
1/2 cup Melted Butter
1/2 cup Coconut Flour
1/4 tsp. Sea Salt
1/4 tsp. Baking Soda
1/4 cup Coconut Milk
2 tsp. Honey (optional)
 
In a bowl, beat eggs together. Add melted butter into the eggs and mix. Add the flour, salt, baking soda and milk. Mix ingredients together well and make waffles!

These can be a little tricky to make, but so worth it! Try and out!
 
 
1/4 cup Coconut Flour
8 Egg Whites
1/2 cup Water
Coconut Oil
 
Whisk flour, eggs and water in a bowl. Melt 1 tsp. coconut oil in a pan and pour 3 tbls. of batter into the pan. Cook until golden brown on one side and flip. Be careful when flipping, it might rip.
 
Makes about 8-10 tortilla shells.

My boys and I had so much FUN making these! Doesn't every kid love M&M's? Mine really do! So anything with M&M's on them will DEFIANTLY be a favorite in my family!
 
 
2/3 cup Butter
2 cups Light Brown Sugar
1 1/3 cup Sugar
4 Eggs
1 1/2 tsp. Baking Soda
1 tsp. Vanilla
1 tbls. Vanilla
1 tbls. Maple Syrup
2 cups Crunchy PB
6 cups Old Fashioned Rolled Oats
1 cup Chocolate Chips
1/2 cup M&M's
 
Preheat the oven at 350 degrees. Beat butter and sugar. Add eggs, vanilla, maple syrup and baking soda. Stir in PB. Add oats and stir again. Mix in chocolate chips.
Press dough into bottom of baking sheet (if you use a 9 x 13 glass pan it will take much longer to cook, due to the thickness) and top with M&M's and press lightly into the dough. Bake for 15-17 minutes until lightly browned on top.

If you are a BIG fan of Churro's...boy, do I have the perfect recipe for you! These are mouth watering good and will for sure be your favorite breakfast yet!
 
 
1 tsp. Salt
4 tsp. Baking Powder
2 tbls. Sugar
2 Eggs
2 cups Bob's Red Mill 1 to 1 GF Baking Flour
1 1/2 cup Warm Coconut Milk
1/3 cup Butter, Melted
1 tsp. Vanilla
3 shakes Cinnamon
 
For Churro Topping:
1 cup Sugar
1/4 cup Cinnamon
1/2 cup melted Butter
 
Mix all dry ingredients together well. In a separate bowl, mix all wet ingredients.  Combine the dry and wet ingredients together and mix.
Cook in a waffle iron and then immediately pour melted 1/2 cup butter on both sides of waffle and dip into the cinnamon sugar churro mixture.

So DELICOUS! You can Thank Me later. ;)

Let's FACE it....in today's world they do not make wheat like they used to. Everything has tons of preservatives, additives, chemicals and who knows what else.
 
No wonder todays society has become obese. It's EASY to. Millions of people in the world are suffering from health problems, yet they are not getting to the root of the problem. We are only going to the Doctors to get a new prescription written to us to cover up the issue that we are having.
 
So it is a CYCLE, a never ending CYCLE of problems.
 
I have struggled with my own STOMACH issues. Bloated. Gassy. Constipated. Pain in my stomach. You name it. I had these symptoms daily and so I started to think it was a normal thing.
 
WRONG!
 
I made an appointment to a Gastrologist  to figure out the problem. I explained my symptoms and he stated that I had Irritable Bowel Syndrome (IBS). He wrote a prescription for a pill that I needed to take daily.
 
I started right away, thinking this was my CURE!
I didn't notice ANY difference. My symptoms were still present. I took the pill for months with NO success.
 
So I gave up for awhile. I didn't know what else to do or go see. Fast forward 3 years...I was researching Gluten Free Eating. Why it was good for you. Why it was worth trying if you had stomach problems such as I. I decided to give it a whirl! I DRAMATICALLY noticed a change in how my stomach felt. No Gas. No Bloat. No Pain. I couldn't BELIEVE it!
 
Gluten Free food was hard to find for awhile, but sooner or later, companies started to come out with more Gluten Free Food to cater to those that were having issues with eating Gluten. TRUST me, there are many.
 
Today I eat as Gluten Free as I can. I'm amazed at what a difference it has made in my LIFE!  I believe I have some IBS symptom's, but most of my issue was GLUTEN! My three kids and husband also eat Gluten Free to help their stomachs. I hope my story will touch someone in at least trying the Gluten Free Path of eating. It is HARD at first, but so worth your HEALTH and how you FEEL in the end.

This is the reason WHY I drink Shakeology DAILY! My stomach NEEDS Probiotics and Digestive Enzymes to stay healthy! Shakeology has dramatically IMPROVED my stomach and bowel issues! :)

It's BROWNIE time! I always used to make brownies out of a box at the store, but oh boy...Homemade Brownies are the WAY to go! These are so delicious and trust me...no one will EVER guess they are Gluten Free!
 
 
Mix...
1 cup Sugar
1/2 cup Bob's Red Mill 1 to 1 GF Flour
1/3 cup Cocoa
1/4 tsp. Salt
1/4 tsp. Baking Powder
 
Add 2 Eggs
1/2 cup Vegetable Oil
1 tsp. Vanilla
 
(I sprinkle chocolate chips in the batter and on top too)
 
BAKE at 350 degrees for 20-25 min.
 
ENJOY!

These cookies are pretty darn TASTY! Every time I make them, no one can tell they are made without FLOUR! Pretty amazing if you ask me!
 
1 cup Creamy PB
3/4 cup Dark Brown Sugar
1 1/2 tsp. Vanilla
2 Eggs
3/4 cup Old Fashioned Rolled Oats
1 tsp. Baking Soda
3/4 cup Chocolate Chips
1/2 tsp. Salt
 
Mix all dry ingredients together in a bowl. Mix all wet ingredients in another bowl. Then combine the wet and dry ingredients together and mix well. Then add the chocolate chips.
 
Spray cooking spray on a cookie sheet and use a mini ice cream scooper to scoop the dough on the sheet.
 
BAKE at 350 degrees for about 8 min. and cool them down before eating.
 
DELISH!!

As I was serving a mission for the Church of Jesus Christ of Latter-Day Saints I remember going to dinner at a families home, they had this for the meal. I looked at it in wonder...I had NO clue what it was. It was something I had never had before! Once I took my 1st bite, I had to get the recipe! Now, this is ALL my oldest son wants for breakfast, haha. It's just that GOOD! (I don't blame him)
 
 
Blend 6 Eggs & 1 cup of Milk (You can use any kind of milk, I personally think it works best with Dairy Milk or Coconut Milk)
Add 1 cup Bob's Red Mill 1 to 1 GF Flour
1/2 tsp. Salt
 
Mix and blend together until there are no lumps left from the flour. Melt about 2 tbls. Butter into a bowl and pour into a 9 x 13 glass cooking pan.
 
BAKE at 400 degrees for 10-15 min.
(You can double this batch for really THICK Hoot N' Nannies if you'd like!)

Well these are a staple baked good in our FAMILY! As I was serving a mission for the Church of Jesus Christ of Latter-Day Saints I received this wonderful recipe from a fellow missionary that was serving with me. I had to get the RECIPE! They will melt in your mouth! You can choose to make Muffins or Cookies with this recipe!
 
 
1/2 cup Sugar
1/2 cup Brown Sugar
1 cup Butter
1 cup Canned Pumpkin
1 tsp. Vanilla
1 Egg
2 cups Bob's Red Mill 1 to 1 GF Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Cinnamon
1/4 tsp. Salt
 
Mix all wet ingredients together in a bowl. Mix all dry ingredients in a bowl. Combine the wet & dry ingredients together and mix until well combined! Add the Chocolate Chips to the mixture.
Scoop out the batter with a small ice cream scooper and either place in 12 count greased muffin pan or scoop out balls on a cookie sheet for cookies!
 
BAKE at 350 degrees for 17-20 minutes. ENJOY the goodness!
